TOMATO - EGG SALAD 
4 med. peeled tomatoes
Salt
3 hard-cooked eggs
1/2 med. cucumber, chopped
1/4 c. chopped green pepper
2 tbsp. chopped onions
1/4 c. salad dressing

Cut tomatoes lengthwise in 6, though not all the way through. Pull apart slightly. Sprinkle with salt. Combine remaining ingredients. Spoon into center of tomatoes. Garnish by placing hard-cooked egg slices between each tomato wedge. Chill. Makes 4 servings.
