BEST EVER BANANA BREAD 
2 ripe bananas, mashed
1 1/2 c. sugar
1/2 c. vegetable oil
2 eggs
1 tsp. vanilla
1/4 c. plus 1 tbsp. buttermilk
1 tsp. baking soda
1 3/4 c. flour
1 c. chopped walnuts, optional

In a medium bowl, mix bananas, sugar, oil, eggs and vanilla. Stir in buttermilk. In a small bowl, stir soda and flour together. Add to banana mixture. Stir in nuts. Pour into a greased 9 x 5 x 3 loaf pan. Bake at 325 degree oven for 1 hour and 20 minutes. Do not double recipe.

For mini muffins; set oven to 400 degrees and bake 10 to 13 minutes. Makes approximately 36 muffins.
