6 med. yams or sweet potatoes, peeled & cut into 1/2" slices Water to cover 1 tsp. salt 1 c. flour, seasoned with 1 tsp. each salt & pepper 2 eggs, lightly beaten & mixed with 2 tbsp. water 6 sm. scallions, chopped Oil for frying Boil slices in salted water until tender. Drain and let dry. Put seasoned flour into a bowl and egg mixture into another. Dip slices first in flour, then in egg, then in flour again. Fry until golden brown on both sides and serve piping hot sprinkled with scallions. |
