CHICKEN (OR TURKEY) ENCHILADAS 
3-4 c. cubed chicken or turkey
1/2 c. chopped onion
1/2 c. green pepper
1 sm. can green chilies
1 lg. carton sour cream
2 cans cream of chicken soup
1 c. sliced black olives, optional
1 pkg. flour tortillas (or corn)
2 c. grated Cheddar

In large bowl mix 1/2 carton sour cream, 1 can soup, onions, peppers, chilies, 1/2 of the olives and 1 1/2 cups cheese. Season to taste. Add chicken and mix.

In another bowl, mix rest of sour cream and can of soup. Pour 1/2 of mixture in bottom of greased 9 x 13 inch pan. Layer tortillas, laid flat, then 1/2 chicken mixture, more tortillas. Remainder of chicken mixture. Top with remaining tortillas and sour cream mixture. Sprinkle with 1/2 cup cheese and olives. Bake at 350 degrees for 45 minutes. (Sets up good by leaving overnight.)
