SOUTHERN BANANA PUDDING 
Dash salt
2 egg whites
2 1/2 c. milk
1/2 c. sugar
25 vanilla wafers
1 pkg. Jello vanilla pudding and pie filling
2 lg. bananas, sliced

Combine pudding mix, egg yolks and milk in sauce pan. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Arrange layer of wafers on bottom and sides of 1 1/2 quart baking dish. Add a layer of banana slices and of pudding. Continue layering wafers, banana and with pudding mix. Beat egg whites with salt until foamy throughout. Gradually beat in sugar and continue beating until mixture will form stiff shiny peaks. Spoon lightly onto pudding, sealing edges well. Bake at 425 degrees for 5 to 10 minutes, or until meringue is lightly browned. Serve warm or chilled.
