SHRIMP JAMBALAYA 
2 c. cooked shrimp, cut in pieces
3 slices bacon, diced
3 tbsp. chopped onion
2 tbsp. chopped celery
2 tbsp. chopped parsley
3 tbsp. green pepper
1 tbsp. flour
4 c. tomatoes
1 tsp. salt
1 tsp. chili powder
3 c. cooked rice
1 c. buttered bread crumbs
Pinch of gumbo file' powder

Fry bacon, then add onion, celery, parsley and pepper. Cook until onions are yellow, then blend in flour. Add tomatoes, salt and chili powder. Simmer in an uncovered pan until mixture is thick. Add rice, shrimp and file' powder. Pour into casserole. Just before serving, top with buttered bread crumbs. Brown under broiler. Makes six portions.
