CREAM CHEESE MINTS 
Can be frozen for one month

1 (3 oz.) pkg. cream cheese
1/2 tsp. peppermint extract
3 c. sifted powdered sugar
Few drops of food coloring
Granulated sugar, extra fine

In small bowl, combine soft cream cheese and peppermint extract. Gradually beat in powdered sugar with electric mixer until smooth. (Knead in the last of powdered sugar with hands). Knead in food coloring until evenly distributed. Sprinkle small candy molds with granulated sugar. Press about 1/2 tsp. of mixture into candy molds. Remove from molds. Makes 6 to 8 dozen. Let dry overnight. Great for showers or weddings.
