EGGPLANT FRITTERS 
1 eggplant
1 lg. egg
1/2 c. flour
2 tbsp. sugar
2 tsp. baking powder
Salt to taste

Peel and cube eggplant. Cook in boiling salted water until tender. Drain and mash. Beat egg, blend in flour, sugar, baking powder, eggplant, and salt. Mix well and drop by teaspoonful in hot fat, turning to brown.
