FRESH APPLE DATE CAKE 
2 c. sugar
1 1/2 c. salad oil
3 eggs
3 c. flour
1 tsp. each: baking powder, soda, cinnamon, nutmeg
1/2 tsp. salt
2 tsp. lemon juice
3 c. peeled chopped apples
1 c. dates, chopped
2 c. chopped nuts
2 tsp. vanilla
1/2 to 1 c. bourbon (optional)

Cream sugar and oil in mixer. Beat in eggs one at a time. Mix sifted dry ingredients into batter. Fold in chopped dates, apples and nuts. Add vanilla and bourbon. Bake in bundt pan at 325 degrees for 1 1/2 hours.

This is a very large cake. Store in tight container. Use Granny Smith apples. This is a moist cake which keeps well indefinitely.
