MEXICAN HAYSTACKS 
4 c. corn chips, slightly crushed
2 c. cooked rice
1 can chile without beans
1 c. grated Cheddar cheese
2 c. shredded lettuce
2 c. chopped tomatoes
1/2 c. chopped onion
Optional toppings: Guacamole, sour cream, hot sauce

Starting with corn chips, pile ingredients in plate, stacking small amounts of each on top of each other (corn chips, rice, chili, cheese, etc.) Top with hot sauce.
