ANISE SNOW CAPS 
6 eggs
1 lb. pkg. confectioners sugar
3 c. all purpose flour
4 tbsp. ground anise seed

1. Grease 4 large cookie sheets.

2. In large mixing bowl, beat eggs well.

3. Add confectioners sugar and beat 10 minutes more.

4. Gradually add flour and add anise seed.

5. Drop by 1/2 teaspoonfuls, allowing room to spread.

6. Let stand at room temperature overnight (the top of each cookie should form a smooth cap or crust).

7. Preheat oven to 325 degrees.

8. Bake 10-12 minutes (remove from oven while cookies are still white).

8. Store in airtight container.

Makes about 12 dozen cookies
