MEATBALLS IN GRAVY 
1 lb. ground beef
1/4 onion, chopped fine
1/2 tsp. salt
1 egg
1/4 c. dry crumbs
1 can mushroom soup (optional)

Mix all the ingredients except soup and form into balls the size of large walnuts. Brown meatballs in greased skillet. Pour off extra fat. Add soup, then pour 1/2 can of water slowly into the soup, stirring constantly.

Spoon gravy over all the meatballs and simmer covered, for about 30 minutes. If gravy gets too thick add more water. Baste meat occasionally. Instead of mushroom soup, gravy can be made as follows. After Step 2 remove meatballs from pan. Mix 2 tablespoon flour with drippings in pan and add 1 1/2 cups water, stirring constantly until thick. Season to taste.
