ZUCCHINI BREAD 
2 c. zucchini squash
3 c. flour
1 tsp. salt
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
1 tsp. baking powder
1/2 tsp. cinnamon
1 c. nuts (optional)

Peel and grate zucchini squash; then set aside.

Sift together flour and salt, then set that mixture aside.

Beat together eggs, sugar, oil and vanilla. Add zucchini, flour mixture, baking powder and cinnamon. Add 1 cup nuts (more or less). Split mixture into two greased and floured loaf pans.

Bake at 350°F for 1 hour or until done. If using glass pans, reduce oven temperature to 325°F.
