DOROTHY'S YELLOW SQUASH PICKLES | |
8 c. sliced squash 4 med. green peppers, diced 4 med. onions, sliced Cover with ice water and 1/3 cup salt for 2 hours. Drain, set in fresh water for 10 minutes. Drain. Mix: 3 c. cider vinegar 3 c. sugar 1 tsp. mustard seed 1 tsp. celery seed 1 tsp. turmeric 1/2 tsp. pepper Bring to boiling, add drained vegetables and boil for 3 minutes. Put in pint jars which have been cleaned and boiled. Seal jars and put in hot water bath for 10 minutes. Remove jars from water and place in draft-free area. When pinging sounds start, jars are sealed. (May also use cucumber slices.) |
