CHILI RELLENO CASSEROLE 
2/3 lb. Monterey Jack cheese, sliced
1 can (8 oz.) green chiles, drained
1/2 c. cracker crumbs
2 eggs, beaten
1 c. milk
1/4 c. flour

Make a layer of cheese in a greased 9 inch casserole, then a layer of green chiles; repeat. Put cracker crumbs on top. Mix eggs, milk and flour; put over first mixture, lifting cheese to let the egg mixture run underneath. Bake at 350 degrees for 30 minutes. Serves 6.

Note: If preferred, use 1/3 pound Cheddar or longhorn cheese and 1/3 pound Monterey Jack cheese.
