MANDARIN BEEF 
2 c. cooked beef, diced
2 green onions with tops, chopped
1 (4 oz.) can water chestnuts
1 c. celery, diced
1 (11 oz.) can mandarin orange segments
1 tsp. Dijon mustard
1 c. mayonnaise
1/2 c. walnuts, chopped
1 tbsp. lemon juice
1 tbsp. soy sauce
1 (3 oz.) can Chinese fried noodles
Lettuce leaves

In large bowl, combine beef, green onions, water chestnuts, celery, orange segments, nuts and mayonnaise. Add lemon juice, mustard, and soy sauce; stir just until mixture is blended. Refrigerate for up to an hour.

Just before serving, toss mixture with noodles and serve over lettuce leaves.

Makes 8 servings.
