HONEY - WHEAT - RYE BREAD 
2 c. milk
2 env. dry yeast
1/3 c. warm water
2 tsp. salt
2 tbsp. melted bacon, drippings
2 tbsp. honey
3 c. all-purpose flour
1 1/2 c. whole rye flour
1 1/2 c. whole wheat flour
Melted butter

Scald milk, then cool to lukewarm. Dissolve yeast in warm water in large bowl of mixer. Stir in salt, bacon drippings, honey and milk. Follow mixing instructions for Basic White Bread recipe, adding all-purpose flour first. Add the remaining flours for the second addition of flour. Proceed as instructed, using all-purpose flour for kneading. Brush hot loaves with melted butter. Cool. Bread will be compact and loaves smaller than Basic White Bread.
