PUMPKIN PANCAKES 
2 1/2 c. flour
1 tsp. salt
1 tbsp. pumpkin pie spice (or 1/2 tsp. each of nutmeg, cinnamon, and ginger)
3 tsp. baking powder
2 c. milk
2 large eggs
1/3 c. brown sugar
2 tbsp. oil
1 c. pumpkin (canned or fresh)

Mix all dry ingredients in a bowl. In separate bowl add milk, eggs, oil, and pumpkin. Mix that together with dry ingredients. Batter will be thick. Pour out on hot skillet or pancake mold.
