HOLIDAY JELLO SALAD 
1 (3 oz.) pkg. Jello
1 c. boiling water
1 c. pineapple juice
1 c. crushed pineapple, drained
1 c. mandarin oranges, drained
2 c. Cool Whip topping

Mix Jello and water in bowl. Stir well until dissolved. Add pineapple juice. Refrigerate until Jello mixture becomes syrupy, approximately 1 hour. Whip Jello mixture until light in color. Add oranges and pineapple. Blend. Fold in Cool Whip. Pour into mold or salad dish. Refrigerate 4-5 hours until firmly set.

Use lime Jello for St. Patrick's Day and red Jello for Christmas.
