BLENDER CUCUMBER SALAD | |
1 lg. cucumber, peeled 1 (3 oz.) pkg. lemon gelatin 1 1/4 c. boiling water 1 (8 oz.) carton cream style cottage cheese 2 tbsp. sugar 4 tsp. lemon juice 2 tbsp. milk Lettuce Peel and slice cucumber into blender container. Cover and blend on high until pureed. Stop blender as needed to push cucumber down from sides. Measure cucumber and add water if necessary to make 1 cup. Dissolve gelatin in boiling water; stir in cucumber. Chill mixture until partially set, stirring occasionally. Pour into a 3 1/2 cup ring mold. Chill until firm. Dressing: In blender combine cottage cheese, sugar and lemon juice; blend until creamy. Add milk, 1 tablespoon at a time, until it is the desired consistency. Unmold salad onto lettuce-lined platter. Pass cottage cheese dressing. Serves 4-6. |
