ELIZABETH'S ORANGE WALNUT
MUFFINS
 
1/2 c. unsalted butter, softened
3/4 c. sugar
2 lg. eggs
1 tsp. baking soda
Grated zest of 1 orange
2 c. all purpose flour
1 1/3 c. buttermilk or orange flavored yogurt
2/3 c. walnuts, chopped fine

1. Preheat oven to 375 degrees. Place paper or foil liners in 12 muffin cups.

2. Beat butter and sugar until light and fluffy. Beat in eggs, one at a time. Stir in baking soda and zest.

3. Gently beat in flour, yogurt and nuts.

4. Spoon into cups.

5. Bake until golden brown, 15 to 20 minutes. We like the yogurt.
