EASY FRUIT AND CHEESE PIE 
1 env. Knox unflavored gelatin
1/4 c. cold water
1 c. (8 oz.) creamed cottage cheese
1/2 c. pineapple juice
1 tsp. lemon juice
1/2 c. sour cream
1/3 c. sugar
1/8 tsp. ground cinnamon (optional)
1 graham cracker pie crust
2 c. suggested fruit
2 tbsp. apricot preserves or orange marmalade, melted (optional)

(Sliced strawberries, kiwi or peaches; mandarin oranges, blueberries, or raspberries).

In small saucepan, sprinkle Knox Gelatin over water; let stand 1 minute. Stir over low heat until completely dissolved, about 3 minutes.

In blender or food processor, process cheese, juices, sour cream, sugar and cinnamon until blended. Continue processing, gradually adding gelatin mixture through feed cap, until blended.

Pour into ready-crust; chill until firm, about 3 hours. To serve, top with suggested fruit, then brush with preserves.
