"DISH PAN" OATMEAL COOKIES 
8 c. quick oats
2 1/2 c. sugar
1 tbsp. ginger

2 c. vegetable shortening, melted
2 c. dark molasses
4 eggs, beaten
1/4 c. hot water

8 c. flour, sifted (reserve 1/2 c.)
1 tbsp. salt
2 tbsp. baking soda

3 c. seedless raisins
2 c. walnuts, coarsely chopped
(Currants, chocolate morsels etc. may be substituted for part of the 5 c.)

Mix with wooden spoon or hands if necessary. Roll out with reserved flour with rolling pin 1/4 thick; cut size to 3" - 3 1/2" and sprinkle with sugar. Bake 8 - 10 minutes at 375 degrees. Makes 6 dozen. Cookies can be dropped and flattened with lightly floured measuring cup.
