DEPRESSION POTATO BREAD | |
2 1/2 c. mashed potatoes 2 tbsp. softened butter 2 tbsp. sugar 2 tbsp. salt 2 1/2 c. warm water mixed with 2 c. warm milk 1 pkg. yeast, dissolved in 1/2 c. warm water 16 c. flour, all-purpose Using your largest bowl, stir together all ingredients except the flour. Gradually stir in 10 cups flour. Cover and let rise for 1 hour. Now add from remaining flour till you get a stiff dough. Knead dough 5-10 minutes till smooth and elastic. Divide dough into fourths and shape into loaves. Place into loaf pans approximately 3 x 4 x 8-inches. Cover each and let rise till dough has doubled in size. Bake at 375 degrees till golden brown, approximately 40 minutes. Remove baked bread from pans and let cool on cooling rack. Once cool, store in air-tight containers. If you eat it while it's warm, it won't last long. |
