PEANUT BRITTLE | |
2 c. sugar 1 c. water 1/2 c. dark Karo syrup 1/2 c. maple syrup Approximately 1 tsp. salt 1 lb. raw peanuts 1 tbsp. butter 1 heaping tsp. baking soda Mix sugar, water, corn syrup, maple syrup and salt and boil mixture to 238°F (thread). Add peanuts and boil to about 295°F. Stir frequently, as this will burn easily. Then add butter and soda, mixing well. Pour in 2 buttered sheet pans, shaking it thin. When cool enough, break into pieces. |
