The chicken is even better if prepared one night in advance and allowed to marinate overnight, turning it occasionally so that all sides have time to marinate. The grill is prepared and coals are burned about 1/2 hour until they turn white.
The meat is then placed in the center, allowed to brown and then turned over. After both sides are browned, close the grill openings and allow meat to finish cooking on the outer edges. Cooking time is approximately 45 minutes to an hour. Add your sauce and let simmer for the final 10 minutes.
