STEAK AND ASPARAGUS 
1/2 - 1 lb. fresh asparagus
1 lb. lean beef round steak
1 tbsp. oil
2 lg. onions
1 tsp. arrowroot
1/4 c. sherry wine
3 tbsp. soy sauce
1/2 tsp. sugar

Brown steak quickly on both sides; meat should be very rare. Slice meat diagonally against grain in thin strips. Slice asparagus into 1 inch pieces. Slice onions thick. Combine onions, asparagus, and sherry in skillet. Cover and cook 5 minutes.

Stir together arrowroot, soy sauce and sugar. Add to skillet; cook and stir until mixture thickens. Stir in steak and cook until well heated. Meat should be rare and vegetables crunchy. Serves 4. 250 calories each.
