JACK-O'-LANTERN COOKIES | |
ORANGE COOKIE DOUGH: 1/2 c. butter (softened) 1 c. sugar 1 egg 1 tsp. orange extract 1 tsp. orange food coloring (optional) 2 c. plus 2 tbsp. flour 1/2 tsp. baking powder 1/4 tsp. salt 1. Beat butter and sugar until fluffy. 2. Beat in egg, extract and coloring. 3. Add dry ingredients, stir vigorously. 4. Refrigerate 4 hours or overnight. CHOCOLATE COOKIE DOUGH: 1/2 c. butter (softened) 1 c. sugar 1 egg 2 c. flour 1/2 tsp. baking powder 4 tbsp. cocoa 1/4 tsp. salt 1. Cream butter and sugar. 2. Beat in eggs. 3. Add dry ingredients, stir vigorously. 4. Refrigerate 4 hours or overnight. 1. Roll dough 1/8 inch thick on lightly floured surface. 2. Cut 3 inch circles of chocolate dough. 3. Transfer to ungreased cookie sheet. 4. Cut 3 inch cookies of orange dough. Use paring knife to cut eyes, nose and mouth. 5. Lightly brush chocolate cookies with water. Press gently to adhere layers together. 350 oven, 15-20 minutes. 3 dozen. |
