LEANN'S 6 WEEK BRAN MUFFINS | |
2 c. All Bran cereal 2 c. boiling water 1 c. oil 3 c. sugar 4 eggs, or 6 egg whites 1 qt. buttermilk 5 c. flour 4 c. bran flakes 5 tsp. baking soda 2 tsp. salt; optional Pour boiling water over All Bran; set aside to cool. Combine oil and sugar. Add eggs, buttermilk, and cooled bran mixture. Combine flour, bran flakes, soda and salt; add to above mixture. Store batter in 1 gallon glass jar in refrigerator (will keep for 6 weeks). Line muffin tins (or grease). Bake at 400 degrees for 15-20 minutes. When baking each batch, you may add nuts, raisins, dates, etc. |
