SALMONETTES (A HELOISE RECIPE) 
1 can salmon
1 egg
1/2 c. flour
1/2 onion (chopped, optional)
1/4 c. salmon juice
1 tsp. baking powder

Drain and reserve juice from salmon. Stir together the egg, flour, onion, and salmon. Stir baking powder into salmon juice and pour into salmon mixture. Beat well with fork. Mixture will be thin. Drop 1/2 teaspoon at a time into hot shortening and fry until brown. Drain on paper towel. Serves 6.
