CHEESY SPINACH PIE | |
2 tbsp. vegetable oil 1 sm. chopped onion 1 (10 oz.) pkg. frozen chopped spinach, thawed & completely drained 1/2 lb. (2 c.) grated Muenster cheese 1/2 tsp. salt 1/4 lb. (1 c.) grated Monterey Jack cheese 1/4 tsp. pepper 1/8 tsp. ground nutmeg 5 lg. eggs, beaten In skillet, heat oil over medium heat and add onions; cook for about 5 minutes, stirring occasionally. Add spinach and cook until all moisture has evaporated (about 2 minutes). Remove from heat and put aside. Mix cheeses, salt, pepper and nutmeg with eggs. Add spinach mixture and stir until blended. Spread in greased 9 inch pie plate. Bake until top is lightly browned. A great lenten dish. |
