ENGLISH LEMON CURD 
3 lg. eggs
3 lg. lemons
3 oz. butter
9 oz. sugar

Whip eggs lightly, grate in lemon rind. Add lemon juice, butter and sugar. Mix together in double boiler stirring constantly over boiling water until butter melts. Continue 5 minutes more. Curd is ready. Will keep long time in refrigerator.
