One square baking chocolate equals 3 tablespoons cocoa plus 1 tablespoon oil or shortening.

One ounce premelted unsweetened chocolate equals 3 tablespoons cocoa plus 1 tablespoon oil or melted shortening.

Six ounce package semi-sweet chocolate chips equals 6 squares (1 ounce each) semi-sweet chocolate equals 6 tablespoons cocoa plus 7 tablespoons sugar plus 1/4 cup shortening.

One (4 ounce) bar sweet cooking chocolate equals 4 tablespoons cocoa plus 4 3/4 tablespoons sugar plus 2 2/3 tablespoons shortening.
