TURKEY STUFFING 
FOR 20-25 POUND BIRD:

2 c. chopped celery
2 c. chopped onions
6 qt. bread cubes
1 c. melted shortening (use sausage drippings)
3-4 c. hot water (use water giblets cooked in)
3 eggs
3/4 lb. sausage
1 tbsp. plus 1 tsp. poultry seasoning
1 tbsp. sage
1/2 tsp. pepper
2 tbsp. salt
2 tsp. celery seed
Chopped giblets

Mix together and stuff 20-25 pound bird.
