THE MARINATED SCALLOPS (Minuet) | |
1 lb. scallops 1/2 c. cooking wine (white) 1/2 tsp. basil 1/2 tsp. tarragon 1/8 tsp. dill 1/2 tsp. paprika (2 shakes) 1/2 tsp. garlic 1 tsp. lemon juice 1 tsp. chives Put scallops in skillet with wine and lemon juice. Cook on medium heat for approximately 5 minutes. Add garlic and mix thoroughly. Cook for 5 minutes more and mix occasionally. Add basil, tarragon, chives and dill; mix. Lower heat and allow to simmer until scallops are done. Remove from heat and shake on paprika. Serve with white or brown rice and a green vegetable of your choice. A dry white wine will compliment this dish nicely. |
