WALNUT CHICKEN 
1 lb. chicken breasts cut in strips
1 egg white
1 tbsp. water
1 tsp. cornstarch
2 tbsp. oil
1 tbsp. soy sauce
3 scallions, cut up with tops
2 slices fresh ginger, minced
1 clove garlic, minced
1 tbsp. bourbon
1 tsp. sugar
1/2 c. coarsely chopped walnuts

Mix eggs, water and cornstarch. Coat chicken, cook in hot oil until white. Remove chicken. Cook scallions, ginger, garlic in oil for 2 minutes. Add chicken, cook 1 minute.

Mix soy sauce, bourbon, sugar. Pour over chicken and add walnuts. Serve.
