CHINESE CHICKEN SALAD 
3 chicken breasts, cooked, skinned, boned and cubed
1 c. chopped celery
3 chopped scallions
1 sm. can water chestnuts
1/2 c. toasted, slivered almonds
1/4 c. toasted sesame seeds
2 c. fresh bean sprouts
1 sm. can chow mein noodles

DRESSING:

1 c. mayonnaise
3 tbsp. soy sauce
1 tbsp. lemon juice
1 tsp. fresh ginger

Mix dressing ingredients together and refrigerate for one hour.

Combine chicken and next 5 ingredients.

When ready to serve, add dressing to salad mixture, then toss with bean sprouts and Chinese noodles. Serve immediately.
