JALAPENO CORN BREAD 
1 lb. ground beef
1/2 lb. longhorn cheese, grated
1 chopped onion
2 jalapeno peppers, without seeds

Brown meat and drain well.

BATTER:

1 c. yellow cornmeal
2 eggs
1 c. milk
1 tsp. salt
1/2 tsp. baking soda
1 can creamed corn
1/2 c. salad oil

Mix batter and pour less than half into a black iron skillet. Next put in all of the cheese with onions and jalapeno peppers; next put in all the meat, then the remaining batter.

Bake in a 350 degree oven 45 minutes or until done in the center.

I don't have a black iron skillet and use a regular Pyrex baking dish; we think it is just as good. Also, the original recipe called for 4 jalapeno peppers; we find that 2 are just fine!
