JALAPENO DOUBLE CORN BREAD 
1 (18 oz.) pkg. corn muffin mix (I use Marie Callender's)
2 1/2 c. milk
1/2 c. vegetable oil
1 med. onion, grated
1 (16 oz.) can cream corn
1 tbsp. sugar
3 to 4 tbsp. canned green chilies, chopped
3 eggs, beaten until foamy
1 1/2 c. Sharp Cheddar cheese, coarsely shredded (sometimes I will add pepper jack also)

In large mixing bowl, combine first 7 ingredients and mix well. Stir in eggs well, then add cheese. Put in greased 13 x 9 x 2 inch baking pan. Bake in preheated oven 40 to 45 minutes. (Even better the next day.)
