APRICOT BARS 
2 c. apricots (or fresh fruit)
1/4 to 1/2 c. water
3 tbsp. honey or 1/2 c. sugar
3/4 tsp. almond extract (or vanilla)
1/2 c. butter
1 c. brown sugar
1 1/4 c. flour
1 1/4 c. oatmeal
1/2 c. chopped pecans
1/2 tsp salt
1/2 tsp. baking soda

Simmer fruit, sugar and water until fruit falls apart and mixture thickens. Add extract. Cream butter and brown sugar. Add remaining ingredients. Press half into buttered 8 inch square. Spread with fruit filling. Spread with remaining mixture. Bake at 350 degrees for 25 minutes.
