WATERMELON RIND PICKLES | |
Rind of 1 watermelon (1 gal.) 2 c. pickling lime 5 c. sugar 6 tsp. mixed spices (tie in cloth bag) 3 pt. vinegar (white) Red or green food coloring Peel and cut watermelon rind into strips approximately 1 inch wide. Cut strips into about 1 inch pieces. Be sure to cut off all red meat. Mix 2 cups of lime with 2 gallons of water. Pour lime water over rind and let stand for 12 hours. Stir occasionally. Use crockery ware, porcelain or glass containers. Remove rind from lime water. Soak in fresh cool water for 2 hours. Wash in fresh water 3 times. Cook in clear water until transparent. Remove from heat and drain well. Mix together sugar, spices and vinegar and bring to a hard boil. Add red or green food coloring. Add to well drained rind and cook 5-10 minutes. Pour into clean hot jars and seal. |
