PINEAPPLE CREAM PIE 
1 vanilla crust recipe
1 (4 serving) sugar-free instant vanilla pudding
1/4 tsp. nutmeg
2 c. nonfat milk
8 oz. nonfat cream cheese
1 tsp. vanilla
1/2 tsp. cinnamon
8 oz. unsweetened crushed pineapple, drained (reserve juice)

TOPPING:

1/2 c. nonfat sour cream
1 tsp. vanilla
2 tsp. pineapple juice
1/2 tsp. cinnamon

Bake crust 6-7 minutes. Cool completely.

Add milk to pudding and beat until thick, about 2-3 minutes. Add cheese, vanilla, and spices and blend until smooth. Fold in pineapple and sour cream into crust. Chill 1 hour.

Combine topping ingredients and spread evenly over pie before serving. Serves 8.
