JOSEPHINE'S PIGNOLLI COOKIES 
1/2 lb. almond paste
1 c. confectioners' sugar
1/4 lb. pignolli nuts
2 egg whites

With mixer, beat almond paste, confectioners' sugar, and egg whites, one at a time until mixture is smooth. Refrigerate 1 hour or more. Make balls size of walnuts. Grease cookie sheet. Place balls on cookie sheet and bake at 350 degrees for 15 minutes. 45 cookies.
