POTATO AND SPINACH SOUP 
4-5 potatoes, cubed, skins on & cleaned
1 onion, chopped
3-4 bouillon cubes
3 cloves garlic, pressed or chopped
1/2 lb. mushrooms, fresh, sliced
1/2 lb. spinach, fresh, cleaned
Ground pepper, to taste
Oil, olive for sauteing

Saute garlic and mushrooms in oil. Place cooked mushrooms and garlic in 6 quart pan with 1 1/2 quarts of water plus all remaining ingredients. Simmer and add pepper. Cook at medium heat until potatoes are done.
