TURKEY CUTLETS PICCATA 
Flour
Salt and pepper
3/4 lb. turkey cutlets
4 tbsp. butter
1 tbsp. oil
2 tbsp. fresh lemon juice
1 1/2 tbsp. dry white wine

Dredge turkey in flour, salt and pepper mixture. Melt 1 tablespoon butter with 1 tablespoon oil in skillet over medium high heat. Saute turkey until just cooked, 2 minutes and remove. Add remaining 3 tablespoons butter. Add rest of ingredients, scraping up any brown bits. Spoon over turkey and serve.
