SHRIMP SCAMPI 
2 lbs. shrimp
8 tbsp. butter
1/2 c. olive oil
1 tbsp. lemon juice
1/4 c. finely chopped green onion
1 tbsp. finely minced garlic
1 tsp. salt
Freshly ground pepper
Parsley

Defrost shrimp, if frozen, and pat dry. Preheat broiler. In large broiler pan, melt butter and stir in oil. Add lemon juice, onions, garlic, salt and pepper. Add shrimp and broil for 5 minutes. Turn shrimp over and broil 1 minute. Serve over white rice and sprinkle with parsley.

Serves 4.
