SCALLOPS SCAMPI | |
1 lb. scallops 2 tbsp. butter, melted 2 tbsp. lemon juice 2 cloves garlic, minced 1-2 tsp. black pepper 1/4 c. chopped parsley, fresh is best 1/4 c. bread crumbs Place scallops in broiler-proof pan in a single layer. Mix remaining ingredients except bread crumbs and pour over top. Sprinkle bread crumbs over top; some freshly grated Parmesan is especially good on top of the crumbs. Broil for about 5-6 minutes. Don't overcook! Serves 4. |
