MUSSELS WITH TOMATO SAUCE 
2 lbs. mussels
2 tbsp. olive oil
1 small red onion
1 cup red wine
1 can stewed tomatoes
2 cloves garlic
1/3 cup chopped fresh cilantro
salt, to taste

Scrub mussels and rinse thoroughly discarding any opened shells. Chop red onion and fry with garlic in large pot. Once onions have softened, add wine and stewed tomatoes and bring to a boil. Add mussels and cilantro, steam with lid on for approx 5 minutes (till shells have opened). Discard any mussels that have not opened.
