DAD'S SPOON BREAD | |
1 c. cornmeal 1-1 1/2 tsp. salt 2 c. boiling water 1 1/2 c. milk 1 tbsp. butter 2 tsp. baking powder 3 eggs, beaten (I now use self-rising meal and omit baking powder). Preheat oven to 400 degrees and melt butter in 1 1/2 quart casserole dish. (Don't let burn). Pour boiling water over meal, salt and baking powder, stir, add milk. Add beaten eggs to mixture, add melted butter and stir - pour into warm casserole dish. Return to oven and bake for 1 hour. (The first solid food I ever ate was salt herring roe mixed in this spoon bread.) |
