CHICKEN WITH RICE 
2 1/2-3 lb. chicken
1 sm. onion, sliced
2 cloves garlic, mashed
2 bay leaves, water to cover
1/2 tsp. salt
1 c. uncooked rice
3 tbsp. butter
1 sm. onion, minced
1 clove garlic, mashed
1/2 c. cooked tomatoes
1 tbsp. minced parsley
1 green pepper, thinly sliced
2 pimentos, mashed
2 1/2 c. hot chicken stock

Cut cleaned chicken into serving portions and cook with next 4 ingredients until tender; about 1 hour. Brown rice in butter and cook with remaining ingredients until tender. Serve with chicken. Serves 5.
